Fun Treats to Welcome in the Spring
Spring has sprung and your children are spending more and more time outside. These treats are sure to give them a taste of the season to come!
Ice Cream Sandwich Cookies
Ingredients:
- Large chocolate chip cookies (fresh from the bakery)
- Candy sprinkles, chocolate shavings
- Ice cream (any flavour)
Allow ice cream to soften slightly.
Spread ice cream so that it is sandwiched between two cookies, about 1” thick.
Next, roll edges of each sandwich in candy sprinkles or chocolate shavings.
Wrap in plastic wrap and chill in freezer.
Alternatively – mix and match different types of cookies (such as oatmeal raisin or peanut butter) with different ice cream flavours. You can also try rolling the cookie edges in shaved peanut butter chips, shredded coconut, raisins, etc.
Strawberry-Lemon Pops
Ingredients:
- 1 can frozen lemonade (from concentrate)
- 1 package frozen strawberries
- 3 cups cold water
- Popsicle molds
In a large pitcher, make frozen lemonade as directed and set aside.
Blend strawberries in a blender until smooth.
Pour the strawberry slush into the pitcher with the lemonade.
Stir mixture thoroughly.
Pour mixture into popsicle molds and freeze.
Alternatively, try adding fresh strawberries instead.
Spring Time Sugar Cookies
Ingredients:
- Sugar cookies
- Edible cake decorations
- Icing
- Cookie cutters
Mix up a batch of sugar cookies from scratch, or buy the premixed frozen ones.
Use spring themed cookie cutters to cut cookies from the dough.
Bake according to directions.
When cookies are cool, decorate with pastel coloured icing, icing glaze, edible cake decorations and candy sprinkles.
You can also make sandwich style cookies by simply smearing icing between two cookies.
