Passover Treats

 
Thankfully, kosher for Passover treats do exist! These recipes are easy to make with children four years of age and older. Please make sure that an adult handles all the heating and cooking.

Chocolate Chip Meringue Cookies

Ingredients:

  • 16 oz semi-sweet chocolate chips
  • ¾ cup sugar
  • 1/8 tsp salt
  • 2 egg whites
  • 1 tsp vanilla

Using beaters, mix together egg whites, vanilla and salt.

Gradually add sugar and continue beating until firm peaks form (pull beaters slowly from mixture to test for peaks).

Using a spatula, fold in the chocolate chips.

Drop onto a lightly greased cookie sheet and bake at 275o for about 30 minutes.


Matzo Bark
 

Ingredients:

  • 1 lb semi-sweet chocolate
  • 1 tbs vegetable shortening
  • 2 sheets of plain matzo (crushed)

Line a rectangular baking sheet with tin foil, shiny side up.

Break chocolate into pieces (or use chocolate chips).

Melt chocolate and shortening in a double boiler, over a low heat.

Stir constantly.

When mixture is smooth, remove from heat and mix in crushed matzo pieces.

Pour mixture onto the baking sheet and pat with spatula to ensure matzo pieces form a single, even layer.

Chill in fridge and break into smaller pieces to serve.  


Matzo Toffee

Ingredients:

  • Sheets of plain matzo
  • ¾ cup unsalted butter
  • ¾ cup chocolate chips
  • ¾ cup brown sugar (firmly packed)
  • ¾ cup chopped roasted almonds
  • Optional: raisins, candy sprinkles

Preheat oven to 375o degrees

Line a baking sheet with tin foil and place matzo on the foil, so it covers it entirely.

Heat brown sugar and butter over a medium heat, until the mixture comes to a boil.

Stir constantly for 3 more minutes.

Remove mixture from heat and pour over the matzo

Place in oven and turn oven down to 350o.

Bake for about 12 minutes.

Remove from oven and pour chocolate chips over the top.

Let stand until chocolate has melted.

Use a spatula to spread the melted chocolate over the mixture.

Sprinkle chopped almonds on top.

Chill in fridge until hard.

Optional: you can also add raisins or sprinkles over the top.
