Toasted Pumpkin Seed Snacks

Next time you carve a pumpkin, make a treat your kids will love!

Ingredients:

  • Pumpkin seeds
  • Salt
  • Cooking spray
  • Other seasonings optional (onion powder, garlic powder, cayenne, curry, etc.)

Preheat oven to 250o.

Rinse seeds and remove pulp.

Let the seeds dry.

Grease a rectangular cookie sheet with a cooking spray (Pam).

Spread seeds so that they form a single layer.

Sprinkle with salt and other seasonings, as desired.

Roast seeds for about one hour or until golden brown (stirring every 15 minutes).

Let cool and eat!

Don’t forget, the shells are edible too, so they don’t need to be shelled.

Note: Though easy for children four years of age and older, please make sure an adult handles all the heating and cooking.

For another tasty treat, try toasting the seeds with a little maple syrup, it gives the pumpkin seeds a subtle sweet flavoring.  This year I removed the shells and toasted the seeds, what a difference, they tasted terrific.
